KUCHING: Borneo Convention Centre Kuching (BCCK) has been granted ‘halal’ status by the Sarawak Islamic Council (Jais) just in time for Parti Pesaka-Bumiputera Bersatu (PBB) Convention scheduled to start this Saturday.
BCCK executive director Dr Mohamadon Abdullah said the standard would be a challenge to keep up.
Regarding the convention, he felt proud that they were prepared to feed at least 5,000 persons attending it.
“For this function, we hired around 500 part-timers,” he said.
He revealed that most of them are hospitality students from institutions of higher learning in the city.
“They get to do their industrial training, and we get to help build human resource capital in the state,” said Mohamadon.
The BCCK Culinary Production Team has incorporated the halal requirements into Hazard Analysis and Critical Control Points (HACCP), having regard to the fact that BCCK caters for multi-racial, multi-cultural and multi-religious mix of its clientele.
HACCP is a management system in which food safety is addressed through the analysis and control of biological, chemical and physical hazards from raw material production, procurement and handling, to production and consumption of the finished product.
Mohamadon added that culinary production at BCCK not only emphasises on the absence of ingredients that are prohibited by Islam, but also to the International Standard of hygiene and cleanliness of food.
BCCK is also aiming at achieving ISO 22000 certification – a complete food safety management system incorporating the elements of requisite programmes for food safety, HACCP, and quality management system.
